I am not a vegetarian but am trying to eat better sourced/reared meat and fish. Which means they cost more and vegetables as well tasting damn good are quite a bit cheaper. Hence why you might see a few veggie cookbooks reviewed here in the next couple of weeks (and recipes if you are reading this on my cookbook account). This books is well laid out and the photos are good motivation since most of the recipes don't need complicated ingredients acquiring to try them out. I also like the fact that Elliot is incrediably enthusiastic without being an evangelist or disapproving of meat eaters. 8/10. I'll also copy this review to my cookbook (lj user="wolfgirlcook"> and attach some of the recipes in comments.

Butter Bean Burger

Fry 1 onion for 5 mins, add a crushed clove of garlic and fry for another 2 mins. Add 1 tin of drained butter beans and cook for 5 mins. Remove to a bowl, mash to make a rough paste and add 1 or 2 tblsp chutney, pickle or mustard. Heat the grill, warm a burger roll and pile the mixture in the roll.

Sesame Crisp

2 tblsp sesame seeds and 6 tblsp caster sugar in a pan, heat till the sugar melts. When it goes golden, pour onto a square of non-stick paper. Leave to harden. Serve with ice cream.

I like books like this!

However... I often find they never include the preparation of the vegetables (for example) in the time estimate - something which, for me at least, always adds considerably to the overall time from start to finish!

Do you know, I didn't even really look at the times given for recipes since I normally allow plenty of time for chopping, tidying and wahsing thing as I go, hunting in cupboards for spices or a mixing jug... Guess I just plan for my distraction!

Garlic mushrooms

---

Fry onion for 5 mins, add 1 crushed garlic clove for 2 mins. Add 1 tin butter beans and cook for 5 mins, mash to make a rough paste. Stir in 1 - 2 tblsp chutney/pickle/mustard according to taste. Heat grill, warm a burger roll and pile will mix.

Cheese dip - 20z grated cheese to 1oz cream cheese or yoghurt.

Yoghurt brulee - 1/2 pt plain yoghurt, 3oz caster sugar. Heat sugar in saucepan until it is syrup, pour onto yoghurt and chill till needed.

Easy Veg Daal - 70z split red lentils, 1 tsp gionger, 1/2 tsp tumeric, 1 tsp cumin seeds, 1 tsp ground coriander, pinch of chilli with 1 litre (1 3/4 pts) water. Bring to boil, peel and slice an onion and 2 carrots and a clove of garlic. Add, cook for 25 mins. Thickens to porridge like cosistency, add 4oz peas for 2-3 mins. Stir in juice of 1/2 lemon. Serve with bread or rice.

Casserole - 5 sticks of celery, 2 large carrots, 2 large leeks all sliced and boiled in 1pt of water. In another pan fry 1 large onion for 5 mins. Add 8oz button mushroom and 2 tsp garlic. Stir, cook for another 5 mins. Add 9oz can of whole chestnuts and stir tblsp plain flour in. Cook for 2 mins. Add other veg and their water. Add a good sprig of thyme, 5 fl oz of red wine, 1 tblsp veg stock concentrate, 2 tblsp soy sauce. Simmer gently for 15 - 45 mins.

Sesame crisp - 2 tblsp sesame seeds and 6 tblsp caster sugar, put in a pan until sugar melts, when its golden pour onto non-stick paper. Leave to harden. Serve with ice cream.
